Strawberry Arugula Summer Salad

There is a ton of food blogs out there already, so today this is not going to pretend to be one of them. No culinary school experience over here, just enough of the medical to try to convince you that choosing the healthiest (and tastiest!) options is also pretty important.

So in a celebration of merging the theoretical with the practical, we’re kicking of a healthy eats section, by sharing quick and easy ways to toss your fave ingredients together. Fast food has never been so healthy.

A summer fave that will nip cravings in the bud is Strawberry Arugula with Poppyseed Dressing:

The Salad

Arugula – 1 cup has quite literally 4 calories, use about 6 cups for the proportions below (for a grand total of a whopping 24 cals)

1 cup of strawberries (53 cals) 

1/4 cup of toasted or candied walnuts (200 calories 17g of fat, same as non-candied, surprised? I was!)

1/2 a cup of reduced fat feta cheese (60 calories)

1/4 cup dried cranberries (85 cals, 23 g carbs)

The Dressing (8 servings, 150 calories per serving)

1/2 light olive oil.

1/4 cup sugar

1/4 cup red wine vinegar.

1 teaspoon poppy seeds.

1 teaspoon dried mustard.

1 teaspoon salt.
